Following the success of their French bistro Chez Billy Sud, restaurateurs Ian and Eric Hilton, along with chef and partner Brendan L’Etoile, have expanded and added a wine bar next door. Bar à Vin, which translates to “wine bar,” shares the same philosophy as Chez Billy Sud, emphasizing classic French wines in a warm and inviting atmosphere. Sommelier Andrew Wooldridge will oversee the wine program. Bar à Vin’s extensive list will concentrate on terroir driven wines from classic regions such as Burgundy and Champagne, as well as lesser known appellations like Languedoc- Roussillon, the Jura and Savoie. “These regions are very complex, and evaluating the differences between producers, vineyards, and vintages can be off-putting,” explains Wooldridge. “Our goal is to demystify all of that; no pretension or snobbishness, just passion for great wine.”
In addition to France, the list also highlights wines from Italy, Germany, Austria and the United States. Classically inspired cocktails, old world style beers, aperitifs and digestifs will round out the menu. Chef Brendan L’Etoile will complement the wines with a selection of house made charcuterie and European cheeses. Situated on the other side of the patio from Chez Bill Sud, Bar à Vin is an intimate and rustic space, designed by long time Hilton brother partner Joe Reza. Dark stained wood graces the floors and table tops, surrounding a bar topped in copper. The exposed brick walls are original to the historic building and have been refurbished for the newly designed space. The walls are adorned with embossed velvet and a wood burning fire place in the front adds to the cozy atmosphere.
