Northern Italy has perfected enduring the cold weather and using the best that it has to offer to form delicious and delectable creations. As we embrace our own cold weather here in Georgetown, we have picked some of our favorite dishes from various regions, emphasizing the best seasonal ingredients, to create a full menu of Northern Italian specialties. We will start off in Liguria with Raw Diver Scallops, then head to Piemonte for Raviolo stuffed with Pear, Taleggio and Speck in a Brown Butter Sauce with Sage, followed by a stop in Lombardia for Pan Roasted Beef Tenderloin with Mushroom Sformato and Truffle Sauce with our final stop in Veneto for the famous Tiramisu! You will be joined at every course for a description of each dish–feel free to ask questions. Each Dinner at the Chef's Table is an opportunity to immerse yourself in the things we value here at Via Umbria: great food, great wine, great people!
